I’m back sorry I’ve been gone for a while.
One of the things I hate about being diabetic is not being able to eat the things I love. One of the things I love is pizza. The crust is so full of those bad carbs. I use to order pizza remove the topping and throw the crust away. I wanted a recipe that filled me up like the whole pizza use to do. I worked and worked to get the taste just right. I think I found it with this one. This recipe is so good but don’t take my word for it try it for yourself.
Ingredients
2 pkg frozen cauliflower (cook as directed on pkg)
½ cup plus 2 tbsp Parmesan cheese, grated, divided
1 tbsp plus 1 tsp Italian Seasoning, divided
3 cloves garlic, minced

½ cup marinara sauce
¾ cup mozzarella cheese, shredded, divided
1 cup chicken, (cooked and chopped)

I ‘love’ meatloaf, all kinds, so I thought about making a low carb one. Meatloaf without bread crumbs might be a little tricky but this worked out very well. It’s tasty and filling. If you pair it with green beans… now thats a winner! One slice of meatloaf and half cup of green beans is only 8.6 carbs. I hope you enjoy this one.
